Red Chicken Curry

A few weeks ago, Amy and I made Red Chicken Curry. I love the flavors and smells of a good curry! This recipe is a staple in our house (at least 4 times a year that is). My friend passed it along to me. The secret is Trader Joe's Red Curry Sauce. If you don't have a Trader Joe's nearby, I would just skip on over to the next recipe.

Red Chicken Curry
















  • Trader Joe's Red Curry Sauce (I buy 2 jars to make a larger batch with TONS of flavor!!)
  • Broccoli (fresh or frozen) - Eyeball it! I love broc! - Cut into Bit-Size Pieces
  • 1 Small Can of Water Chestnuts
  • 2 - 3 Idaho Potatoes, Peeled and Cut into Bit-Size Pieces
  • 1/2 Cup of Frozen Peas
  • 1 - 2 Onions, Chopped
  • 2 Chicken Breasts, Cut into Bit-Size Pieces
  • Rice
















1. Cook chicken on the stove top with some olive oil.
2. Boil potatoes and thaw other veggies, if necessary.
3. Put all ingredients in a dutch oven.
4. Simmer on stove top for 30+ minutes (follow directions on the back of the Trader Joe's Red Curry Sauce jar for specifics).
5. Cook rice according to instructions while you wait.

Hearty Chicken Chili

This is one of my favorite winter meals. I love cumin! Anything with cumin in it, however subtle. This will not be your traditional blog post as pictures will have to wait until next season; however, I was digging around my computer in my resume folder (obviously misplaced) and came across this delicacy of a recipe.

Michelle and I used to make it frequently as roommates. It is from one of her cookbooks.

The photo below provides an option to keep recipe books collecting dust on your shelf from becoming dormant! It's a juxtapose: old hard copy recipe books meets the new electronic era via photograph. Grandmas will be happy to know recipe books are still being used.

Veggie Chips

Tonight Laura and I tried out a recipe from one of  the cookbooks she got as a wedding gift. Do you ladies ever use cookbooks? They were very delicious and nutritious...not quite as crispy as we would like, but as Tony stated, "They have good flavor." Here it is:

Veggie Chips



Ingredients:

  • Parsnips, Potatoes, Sweet Potatoes, Beets
  • Canola Oil
  • Oregano 
  • Garlic Powder
  • Salt

Directions:

  1. Preheat oven to 375
  2. Peel the root vegetables. 
  3. Slice them into very thin slices...or use the potato peeler to make "shavings".
  4. Toss the veggie shavings in oil and seasonings.
  5. Lay them in a single layer on a baking sheet and bake for 20 minutes. 



This is a rather messy activity...
