Tonight Laura and I tried out a recipe from one of the cookbooks she got as a wedding gift. Do you ladies
ever use cookbooks? They were very delicious and nutritious...not quite as crispy as we would like, but as Tony stated, "They have good flavor." Here it is:
Veggie Chips
Ingredients:
- Parsnips, Potatoes, Sweet Potatoes, Beets
- Canola Oil
- Oregano
- Garlic Powder
- Salt
Directions:
- Preheat oven to 375
- Peel the root vegetables.
- Slice them into very thin slices...or use the potato peeler to make "shavings".
- Toss the veggie shavings in oil and seasonings.
- Lay them in a single layer on a baking sheet and bake for 20 minutes.
