Hearty Chicken Chili

This is one of my favorite winter meals. I love cumin! Anything with cumin in it, however subtle. This will not be your traditional blog post as pictures will have to wait until next season; however, I was digging around my computer in my resume folder (obviously misplaced) and came across this delicacy of a recipe.

Michelle and I used to make it frequently as roommates. It is from one of her cookbooks.

The photo below provides an option to keep recipe books collecting dust on your shelf from becoming dormant! It's a juxtapose: old hard copy recipe books meets the new electronic era via photograph. Grandmas will be happy to know recipe books are still being used.

Veggie Chips

Tonight Laura and I tried out a recipe from one of  the cookbooks she got as a wedding gift. Do you ladies ever use cookbooks? They were very delicious and nutritious...not quite as crispy as we would like, but as Tony stated, "They have good flavor." Here it is:

Veggie Chips



Ingredients:

  • Parsnips, Potatoes, Sweet Potatoes, Beets
  • Canola Oil
  • Oregano 
  • Garlic Powder
  • Salt

Directions:

  1. Preheat oven to 375
  2. Peel the root vegetables. 
  3. Slice them into very thin slices...or use the potato peeler to make "shavings".
  4. Toss the veggie shavings in oil and seasonings.
  5. Lay them in a single layer on a baking sheet and bake for 20 minutes. 



This is a rather messy activity...
